Clover Organic Farms Cheeses are produced by introducing vegetable rennet, a natural enzyme, to fresh, organic milk from our local family farms. The rennet causes the milk to separate into curds and whey. The curds are then drained and pressed to separate them from the whey until all water is removed. The drained curds are packed into molds with no additional coloring added, then weighted and aged in small batches to develop their flavor.
