HACCP

The HACCP system, which stands for Hazard Analysis of Critical Control Points, was conceived as a systemic and systematic program to ensure food safety. It's principles were developed in the 1960's for application in the NASA space foods program but recently, it has gained acceptance as the fundamental food safety system throughout the world. HACCP was conceived as a series of steps which are integrated into a coherent, systematic and relatively simple system whose main purpose is to minimize the probability of unacceptable hazard impact; this translates into risk control at all points of the food chain.
